This week I've been on a back to work course and I wasn't very organised where packed lunch was concerned but I took my low carb crackers and cheeses and pate with me for breakfast when I got there plus a small banana and a tangerine for snacks. Because I've been more active than usual, and wasn't having my cooked breakfast as normal, I was hungry by 12 but lunch was around 12.30 and mostly sandwiches and soup so I've eaten about 4 slices of bread in a week with no adverse effects.
But that doesn't make me want to start buying bread again for home use. I'll stick to my LCHF but at least I know if I get stuck, the odd sandwich eaten out won't do any harm. I've no desire to eat carbs unless there's no choice.
I start a training course next week for 4 weeks with a view to a job at the end of it so I'm feeling enthusiastic about that as I've been longing for a complete change of job. So I need to plan my lunches for next week, so I've already bought a slab of Polish Boczek which I can slice and take with me, and some egg mayo and cottage cheese tubs.
I've been so chuffed that I've managed to complete this 3 day course without slumping or feeling wiped out during the afternoon or at the end of the day, still had energy to go shopping afterwards! And that hasn't been like me for a looooooooong time.
So, thanks to the forum, I'm a recovering diabetic with a new lease of life.
