I guess the problem with looking for a direct read-across from food in to resulting BG is that this sort of approach won't take a lot of things into account - eg we're all different and our systems work differently: we (at least me) rarely eat a food in isolation; BG depends on many other things, not just food; the BG impact (if any) depends what else someone has eaten; how your liver is behaving; exercise, if any; and there are others.
