Butternut squash

Just found out butternut squash has more carbs than I expected. Ate some for dinner last night and blood sugar was 7.6 after 2 hours. Ok for me to eat or avoid, what do you think?

You have to test and find out I guess. I received a butternut squash with my organic veggie box last week and it is still waiting in my kitchen... I might use it for baking, mixing it with low carb ingredients, or using it for soup, in scrambled eggs or salad - in, say 1/2 cup per portion.

I'm fine with the hokkaido winter squash varieties while butternut squash is a bit of a challenge for BG.

Unfortunately my second most successful crop this year (after tomatoes|) has been b. squash, and there are 15 on the plot. I aim to give away most, store some and eke them out with other veg over a month or two. Nearly all from saved seed too, so cheap!
I'm used to peaking at mid-7s or less after 2 hours these days.

The answer to your question unfortunately is one only you can answer. If you are quite happy to enjoy B squash and get a reading in the 7's 2 hrs later then go for it, on the other hand if you are a bit disappointed to get that number then the answer is no. If you like to eat it but you don't want the higher post meal reading you could try reducing the portion size and see if it makes any difference.

Just occurred to me it depends what "some" means. If you can tolerate only a tiny amount, is it worth bothering with? If you mean you had half a big baked one with butter or something, then it's worth having a quarter of one and testing again (if you like it).

It is delicious raw in a salad, may take longer to raise the BG.

With veggies I really like, I'll work out the amount I can eat and include it with other lower carb veg to give some variety, but never eat a large amount by itself. I can usually tolerate around 60g of butternut without a huge impact.

I found it spikes mine 2 the same with sweet potatoes.
