Yes you certainly can and I tried baking this way when I was first low carbing. Just leave out the sweetener - so ground almonds or other nut flours or meals, butter or oil, eggs, and a raising agent. Í do this all the time though I tend to make my cake mix into muffins rather than complete cakes. However - both erythritol and stevia are quite safe and acceptable for diabetic use if you need "sweet", and stevia apparently has the added benefit of being helpful dealing with insulin resistance! You can make semi sweet cakes with a little grated carrot - this was a trick used during sugar rationing in WW2. Add spices (cinnamon will also add a little bit of sweetness), and other suitable flavourings, lemon, lime.or orange zest, berries, nuts, etc, to your basic mix, bake, top with your dollop of cream and enjoy...Hi @ziggy_w
I like cake, but I don't eat it because of the sugar and flour. However, I am reluctant to use most recipes because I can't get myself to accept that sweeteners are harmless and I don't particularly like sweet tastes anyway. So my question is - can you make cake that doesn't have sugar or sweeteners (or anything else that is sweet and carby). Ideally with lots of cream!
