Cake

I like cake, but I don't eat it because of the sugar and flour. However, I am reluctant to use most recipes because I can't get myself to accept that sweeteners are harmless and I don't particularly like sweet tastes anyway. So my question is - can you make cake that doesn't have sugar or sweeteners (or anything else that is sweet and carby). Ideally with lots of cream!
Yes you certainly can and I tried baking this way when I was first low carbing. Just leave out the sweetener - so ground almonds or other nut flours or meals, butter or oil, eggs, and a raising agent. Í do this all the time though I tend to make my cake mix into muffins rather than complete cakes. However - both erythritol and stevia are quite safe and acceptable for diabetic use if you need "sweet", and stevia apparently has the added benefit of being helpful dealing with insulin resistance! You can make semi sweet cakes with a little grated carrot - this was a trick used during sugar rationing in WW2. Add spices (cinnamon will also add a little bit of sweetness), and other suitable flavourings, lemon, lime.or orange zest, berries, nuts, etc, to your basic mix, bake, top with your dollop of cream and enjoy... :)

Here's @Brunneria 's coffee and walnut cake (beautiful it is not!) I'm taking it to my t2 mother in law tomorrow for her birthday - let's hope it tastes better than it looks!

Marvellous! Well just warn her to take a small slice, and that it is very dense and filling. She will be disappointed if she is expecting a Victoria sponge, and delighted if she is expecting Elven Waybread, coffee and walnut flavour. :D Of all the cakes I have made Mr B, this one is his firm favourite.
 
I have to say, the cake was a hit, with my mother in law, and me :)
I've only made a couple of low carb cakes, one was OK, the second one tasted truly awful, so I was pleasantly surprised at how nice this was. Thanks @Brunneria !
 
haha! Good news!
I have been wondering how it went, and whether you liked it.

The problem I have is that although I LOVE a good LC cake, I actually only want a slice about once every 2-3 weeks. For all my endless chuntering about food and chocolate and treats and so on, I tend not to indulge all that often (today I had one lc nut bar, a coffeesubstitute and some chicken and veg. Nary a cake or an indulgence all day. It is old age, I tell you.

Thank heavens LC cakes freeze well, eh? I wrap each slice individually in clingfilm and stack them like bricks in the freezer drawers. :D Then I find the stacks reducing because when Mr B gets up at 3.30 for an early shift, he grabs a slice to defrost in his work bag in time for Second Breakfast at around 8am.
