Cakes!!

I have always loved cakes. Not in excessive quantities, but I just love cakes. Since taking control of my diabetes, I have been trying to find a way to have a 'low carb' cake. I've experimented with using Stevia rather than sugar, and most recently using ground almonds rather than flour. You get a rather heavier cake, but it's still nice to eat!! Does anyone else have any tips for cutting carbs/sugar in baking??
I know I shouldn't be eating cakes really, but hey, a girl can't be good all the time!

You can use a variation of flavours, and sub some of the flour for ground almonds too. Also, with Splenda (maltodextrin/1% sucralose) being quite pricey in shops, you'll find that Lidl and Aldi both do exact equivalents for about a third of the price :) I found that with Splenda you can't simply substitute as you would for sugar as it doesn't rise as well, though using skimmed milk powder and whisking the eggs whites beforehand (as suggested in the recipe) seemed to work well :) One tip - personally I found it needed a lot more water than the recipe suggests to get the dropping consistency, probably about double in fact
