Carb free snacks

Cubes of cheese, olives, pickled onions, nuts, cold meats, eggs, I'm sure there are more but those are the ones I'm mainly eating at the moment.
 
Some more suggestions for you:

Coconut Oil Super Balls
Prep time 10minutes.

Get some extra virgin coconut oil, add some ground almonds or ground macadamia (or any other nut), add some whey protein (optional) and some cocoa or ground coffee to suit. Mix it all together, and roll them into small balls. Chuck them in your fridge and bang, small balls of fatty/protein energy.

Peanut butter cookies - makes around 12

Ingredients
• 1 c of peanut butter
• 1 egg
• 3/4 to 1 c of sugar substitute (to taste)
• 1 tspn of vanilla

Directions

Get a medium mixing bowl and mix everything together. Place spoonfuls of the dough onto a cookie sheet or baking paper. Top with an almond, macadamia or walnut if desired. Heat your oven to 180C and cook about 12-17 minutes. Remove from baking paper once slightly cooled.

Note: These freeze well too.

This recipe is just perfect for those who have finally gotten rid of their sweet cravings but still want chocolate.

CREAMED COCONUT CHOCOLATE:
Total carbs - 12g

Ingredients:
60g CREAMED COCONUT (not to be confused with coconut cream)
20g CACAO/COCOA BUTTER

Notes: Often the coconut meat and the coconut oil in this product will have separated out. You will need to put the jar in a pot with some really hot water, keep it hot, to soften the meat and melt the oil. then you will have to re-blend. I used stick blender. Some else used a mixer. Then if weather is still hot you should refrigerate to prevent separation again and so it will set.

Method:
1. Put a small pot or metal bowl into a pot of water and bring to heat (no need to boil because everything should melt before then)
2. put in the lump of CREAMED COCONUT and lump of CACAO BUTTER and still till they have melted
3. Put into a small dish lined with baking paper and refrigerate
4. It slices easily

More notes:
.Have someone hide it because you'll eat it all up
.It is not very sweet, with any sweetness in it coming from the creamed coconut
.It has a very strong chocolate flavour without the sweetness

Oooh, lovely recipes, I'm going to have to try these (must add ingrediants to the shopping list!).
Are they all carb free? I thought peanut butter had carbs in it? :***: But it's that long since I ate it I can't remember properly.
 
Sorry, they arent carbfree, but they are very low carb and I think a nice change from the usual eggs/ham/cheese/lettuce.

I have made the humous a few times now (see recipe in the 51 snacks link above), its fooled quite a few people into thinking its real chickpea humous :-)
 
Another great link Whitby Jet, I am looking at the Cauliflower popcorn recipe for a Tv snack for tonight,
I am beginning to see the humble cauliflower in a whole new light. I have already decided only to have cauliflower rice with curry for ever!

Really pleased you like them, they are a hit with my family as well, my youngest had friends for sleepover last night, they made two lots of these cookies.
 
Ace In The Hole. Making my boys of 11 and 12 watch it! I like the cauliflower but no-one else was keen.
 
It was very savoury, and still held some of its vegetabliness! :wink:
 
Try Neris and India's cookbook. It is all carb free and generally sugar free with sugar substitutes. They have fantastic ideas for breakfast and snacks which I find the most difficult. They also advise what to do for lunch when you are out or at work.
