As with many such things, I don't think there is a 'right' answer other than what works for you. You'll see from other posts that there are a lot of opinions on all sides. I was diagnosed T1 about 15 months ago and while I've made a few adjustments to my diet, I'm pretty much eating as I did before. My carb intake varies depending on what I have for dinner (tea). Typically, I'll eat about 125 - 150g across breakfast and lunch and dinner can be between anywhere between 70 - 200 g depending on food and hunger. I do still eat pudding, cake etc. but I also exercise to a reasonable level, my bmi is about 24 and I'm fortunate enough to manage good BG control through carb counting. I do know I'm quite fortunate and what I do won't work for everyone.
Hope some of that ramble is useful to you!!
