Carbs in Milk v Cheese

It's because milk has lactose which is a sugar = carbohydrate.

Cheese would still have a small amount of carbs... but a lot less than milk because they are higher in protein and fat content. Butter is probably just mainly fat, so probably no carbs.

Yes it would remain in the liquid, any lactose left would be finished off by the bacteria.
