Hi!

I LOVE carrot cake, and i do make carrot cake myself...

But my recepie isn't wholey suitable for diabetes... contains a fair bit of brown sugar and icing sugar in the cream cheese icing (mmmm...)

Does anyone know of a good recepie for carrot cake that's more suitable for diabetes? One that tastes really good!!

Oh YUM! THIS is the BEST tasting cake! very low fat, no sugar, and low carb! this is a dieters dream! it has the taste of a REAL! cake (cakes with real sugar and real butter and flour etc) but without all the bad calories and fat and carbs from a REAL cake! HAHA! Dam I am good! :) and now for your PURE ENJOYMENT! here is my recipe!....

LOW CARB, LOW FAT, NO SUGAR CARROT CAKE

5 Eggs Separated

Grated Rind of 1 lemon

1 1/4 cups Xylitol OR Fructose OR Pureed Prunes OR sugar (OR parkinson causing, neurological degenerative artificial sweetener) :p (I used Xylitol)

2 large carrots finely grated (equal to 2 cups)

2 cups packaged Almond meal (ground almonds)

Half a cup Whey protein powder (OR 1/2 cup plain wholemeal flour)

1 teaspoon baking powder



ICING

1 packaged LOW FAT cream cheese

Juice of 1 lemon

1 teaspoon Vanilla essence

Quarter of a cup - 1/2 cup Xylitol (OR fructose OR artificial sweetener OR sugar if you can take the carbs!)

Chopped Walnuts



METHOD

Grease a deep 23 cm round pan and line with greasproof paper at the bottom (or use olive oil and spray a silicone round pan and line base with the greasproof paper as I did )

Beat egg yolks with lemon rind and sugar OR artificial sugar OR sugar substitute in a small bowl of electric mixer until thick, transfer to large bowl, stir in carrot, almonds and whey powder OR flour (with the baking powder already stirred into the flour).

Beat egg WHITES with a very clean mixer and bowl (your powerful mix master with the special whisk does the best job!) until soft peaks form, fold gently into carrot mixture. Pour mixture into prepared pan, bake in moderate oven for about 1 hour. When cool ice with icing.

ICING

Use the whisk on your mix master and cream the cream cheese, sugar OR sugar substitute with lemon juice and vanilla essence, adding more sugar if needed (I had to taste and add more, a tablespoon at a time to get preferred taste) Spoon over cold cake then sprinkle with chopped walnuts. Eat and ENJOY!

Can be Frozen without difficulty! YUM! - even tastes great frozen!

What's Xylitol if not an artificial sweetener?? Remember that although it seems to be safe for humans, it's lethal to dogs.
I'd use Fructos for cooking

Could you please let us know the oven setting to bake the cake at. Going out right now to purchase almonds and whey powder, sounds very yummy.

Fructos is what you get if your left hand doesn't work very well and you're a crumby touch typist anyway!AND you didn't spell-check :lol: It's VERY Sweet and probably harmless in small amounts occasionally. "THEY" recommend diabetics not to use it routinely, because the liver turns it to triglycerides.
I find the taste is pleasant and it doesn't cause the "polyols".
Remeber the carrots are about 8% sugar.
These carrot recipes usually go back to wartime rationing, when sugar was scarce, so carrot was used for sweetening. I have a Christmas pudding recipe with carrots somewhere.
those of us who are country bred ( especially from East Anglia) know that carrots are quite closely related to sugar beet.
