Carrot sticks

This is only my opinion but if a raw carrot stick is not OK then shoot me now.

Personally if I am snacking, it means I'm peckish, I would sooner have a few nuts or a hunk of cheese as this is more likely to stave off my peckishness, but if you are avoiding fat I guess the carrot stick would work?

Do you test with a finger prick? that will give you your answer.

There’s only one way to find out! Test before eating and 2 hours afterwards and see what they do to your blood sugars. I have to say I wouldn’t have carrots for a snack but do have a small amount with other veggies with a dinner. The fat from the meat, fish, cheese or whatever reduce the absorption of the sugar in the carrot.
 
I agree with the comments from @Rachox - we are all different and what works for one person, doesn't for the next.
We can get some hints about what will have the greatest impact by looking at the carb content (Google "carbs in carrots"). The higher the percentage of carbs, the greater the chance it will impact your BG.
But remember, it is the total number of carbs so if you have a whole bag of carrots, this will have a bigger impact than half a carrot in a stew.
