Cauliflower Rice

We tried it, and liked it so much that I now make my own - just whizz it in the blender thing.

We have it as rice, stir fried rice, I lob it into curries for the last few mins of cooking, and you get a cauli biryani, also make a kind of mashed potato with it, and pie toppings...

It is very versatile. and the flavour is quite chameleon-like.

I will probably try fish cakes soon, bound with egg and ovened, not fried, because I think they will be too fragile.
Could I suggest celeriac in you fish cakes?

I'm wondering if it's nice.
Or has anyone tried making their own and have a tasty recipe for it?

Really miss my basmati rice and was dubious about trying this, but cooked a chicken curry the other evening and thought I'd give it a go. Please see link below. I tried the roasted version - eg blitz in food processor, drizzle with olive oil, lay flat on baking sheet, sprinkle with cumin and ground coriander. Roast on gas mark 1 or 200c for 12 mins, turning half way through.

Was really nice - quite surprised! Had it with a sprinkle of chick peas. I like the idea of freezing portions and putting in the freezer - quick to cook when I come home from work!

Forgot to mention - Marks & Spencer and also doing meals with cauliflower rice - diabetic friend reports they are really tasty
 
Tes, fry it in butter, then add chopped onions, mushroom, red peppers and tomatoes and gently sauté. It becomes like a risotto - yummy.:)

I'll try that minus the peppers. Don't like them.
Also likes the idea of doing it with it in an egg fried rice style. Will have to try both.
Your way sounds yummy as a side for Diet Coke chicken. Already written down on next weeks food plan :)
 
Oooo, I like the egg part as well, I'll give that a try at the weekend.
 
I only just done this last night funny enough after reading about it. I used raw cauliflower and grated it to the point I had one whole measuring cups worth so a far bit. I then added Peas, carrots and broccoli to it added a pinch of salt and pepper and microwaved it with some water for 5 minutes and got to say was really nice.
If I could add a picture I would show you my dinner. It is something I am very keen on doing more often, yes it is a little messy making it and a bit time consuming but if I know I'm having it a few days in the week then I guess bylk making it is best.

Figured out how to add it. This was my dinner. Chicken with Basel and sun-dried tomatoes with a bit of mozzarella then cauliflower rice with veg.

Ha this is what I used to make mine. A good idea on ways to cook it. Mine turned out lovely and fluffy and very filling.

Celeriac is very good riced too. Sadly my wife cannot stand celery or celeriac, so we don't eat this, but I love it - you get a wonderful salad called 'Celeri remoulade, which is like Celeriac spaghetti in mustard-laced mayonnaise. It's fabulous.
 
I just did a cracking king prawn curry (if I say so meself) and thought I'd try the notorious cauliflower rice, I went for hand grating on the coarse side of a grater and a smallish cauli was transformed into a largish pile of smelly snow. I stuck half away in a tub, for freezing (thanks for that idea) , a zapped the remainder for 3 minutes, stopping halfway for a quick stir.
What emerged was a slightly disappointing couple of tablespoons of slightly grey....rice I suppose. Undoubtedly cauliflower-smelling I wasn't too convinced the experiment would work, but plated up and got stuck in nevertheless.
Eaten with the curry, as I would normally, I soon forgot what I was eating and was pleasantly surprised at the convincing texture. I'm definitely trying this again and will probably try both the roasted and risotto versions. Thanks to all for the suggestions.
