The concept of 'Cauliflower Rice' seemed alien but I finally riced / grated a cauliflower today, many months after getting diagnosed with Type 2. Sautéed with black pepper and a little Soy Sauce at the end. It was far more satisfying than I expected so thought it was something to share.

Instead of grating I blitz mine in a small food processor it’s quick and easy. Also to add cheese or cream cheese too.
I buy mine frozen from Tesco or Asda 4 bags in a pack. I don’t use it that often now, plus I can’t be bothered with the mess lol
It’s very handy just to have in the freezer when needing something to soak up a sauce or if the family have an Indian takeaway
And yes I should hang my head in shame being a trained chef and working in kitchens for my early career but I stand by my decision lol. I use it that rarely that it’s actually more cost effective for me than buying cauliflower as I don’t use that much eitherIts very hand and also twice the price per portion of buying a cauliflower and chopping, grating, ricing, smashing or otherwise reducing it to small pieces.

If I'm doing a Paella type dish I use the fresh (When lazy buy it pre-done from Sainsburys) the Frozen version I use for curries, chilis etc as I find it to be wetter
Neither, just different, I dry fry the fresh with chick, veg, seafood & spices with ghee, the frozen stuff is used in a sauce like curry or chilli, I just chuck it into the hot sauce, it's a personal preference only, I don't really think that there's much differenceAnd wetter is bad or good?
