Cauliflower Rice

The concept of 'Cauliflower Rice' seemed alien but I finally riced / grated a cauliflower today, many months after getting diagnosed with Type 2. Sautéed with black pepper and a little Soy Sauce at the end. It was far more satisfying than I expected so thought it was something to share.

I don't grate or rice cauliflower - it makes such a mess! Instead I thinly slice the florets and stalks, and cook it for 2-4 minutes in the microwave with a little water. I drain out any remaining water and put the spicy meat & sauce (or whatever) on top.

Instead of grating I blitz mine in a small food processor it’s quick and easy. Also to add cheese or cream cheese too.

I found that messy as well, plus I prefer the coarser version I make when I get my knife out.
 
I buy mine frozen from Tesco or Asda 4 bags in a pack. I don’t use it that often now, plus I can’t be bothered with the mess lol
It’s very handy just to have in the freezer when needing something to soak up a sauce or if the family have an Indian takeaway
 
If you don't have a food processor/don't like to spend as long cleaning it as you did using it, and for various reasons don't want to use a knife, you can put the cauliflower in a bag, freeze it, then hit it with a blunt instrument until it's the texture you want. All the mess is contained in the bag.
 
I just use the frozen bags (4 individual servings bags in pack) like a few others have said. Makes life easy to go with stir fries or a curry or just anything I usually would have with rice. It's not that regular an occurrence so handy to have especially as my husband will have rice instead so good for portion control. My favourite is with stir fry I think.

Its very hand and also twice the price per portion of buying a cauliflower and chopping, grating, ricing, smashing or otherwise reducing it to small pieces.

And yes I should hang my head in shame being a trained chef and working in kitchens for my early career but I stand by my decision lol. I use it that rarely that it’s actually more cost effective for me than buying cauliflower as I don’t use that much either

If it's in the deep freeze I use a lot more than if I have to get my knife out. I like the idea of smashing it when it's frozen though!
 
If I'm doing a Paella type dish I use the fresh (When lazy buy it pre-done from Sainsburys) the Frozen version I use for curries, chilis etc as I find it to be wetter
 
And wetter is bad or good? :)
Neither, just different, I dry fry the fresh with chick, veg, seafood & spices with ghee, the frozen stuff is used in a sauce like curry or chilli, I just chuck it into the hot sauce, it's a personal preference only, I don't really think that there's much difference
