Celeriac - Who Knew !?!

I recently got a new Low Carb recipe book... the low carb alternative to roast potatoes or chips is Celeriac... so I bought some and have tried it and my goodness it's good. I highly recommend having a go if you haven't already.

I had chips last week and roast some celeriac in olive oil tonight. Both were yummy.
 
I made celeriac dauphinoise twice last week. I added thinly sliced onions and grated cheddar. I used double cream watered down with a little chicken stock, s&p. Delicious.
I may try celeriac chips tonight to go with roast chicken legs.
 
a nice potato mash alternative is

1/4 celeriac
1/4 cabbage
1/4 onion
1/4 cauliflower

steam them all as normal then mash add butter , salt , pepper ..........heaven and only about 6 carbs per 100 grams:)
 
I tried this with my roast a few years ago, nope, no can do:yuck:. I'm not a great fan of celery either, can manage it just chopped really finely, or added to casseroles. I do quite like the mash, steamed celeriac then mashed with some double cream and a knob of butter - but that's it lol.
 
Love it but causes both hubby n me probs with stomach. It was my favourite veg..
 
Thin slices instead of pasta strips for lasagne.With leeks for yummy soup etc etc !
