She was the Admin of this keto/Diabetic page, yes very weird quite rude really. She was like the carb police ha ha ha..but because I was politely trying to point out to her that many Diabetics do eat Celeriac and many on YouTube use it on a Keto diet, she got very angry lol. I also told her that Celariac is lower when boiled. Usually, the carb count is in raw form. She actually shut the topic down so that I could not carry on the conversation. I thought "How dare she dictate to others what they should be eating. On here people advise and encourage us to test to see what we can eat,she was like a Nazi and was having none of it lolShe sounds a bit.... weird - but it's possible that because celeriac is a root veg that she assumed that because it's not above ground veg we shouldn't eat it. She obviously hasn't tried it and then tested for it.
I love it and it definitely doesn't spike my BG.
When you look at all the nutritional value in the supermarket's list it says 2.3 gram per 100 gram. Yes it may include the fibre as you say. I eat it at least 3 times a week and have lost weight on it,also does not spike me eitherI have read, somewhere, that celeriac is a swollen basal stem, rather than a root, but you could have fooled me, looking at the stuff. We do eat it, but haven't tested for a long time.
I've just googled "carbs in celeriac" and the answer seems to be 9g per 100g, but perhaps this includes indigestible fibre.

Ha ha ha ha I am now wondering what other wrong information she is giving those poor people lolHas the lady been eating her celeriac in a large bread roll or perhaps a thick pastry crust !!!?
I eat plenty of celeriac and have no problem with spikes

Although it is called 'celery root', biologically, it isn't.
But - bananas are - biologically - berries, and what are called berries at the supermarket, are not.
She needs to go and tell the DietDoctor site off too then.
It was their delicious celeriac recipes that got me started on the lovely stuff.
Now I am using it in soups, stews, curries, as mash, raw in salads, and expect to use it even more widely in future.
It hasn't spiked my bg yet, whereas most of the other 'root' veg do.
