I have just been debating about Celeriac on a diabetic Keto page on facebook. I referred to celeriac as being a great food in place of potatoes as it has something like 2.3 grams of carbs per 100 grams. A woman came on and asked me what it tasted like. I told her a little like a sweet potato when roasted. Another person came on "Well you would have thought that I was recommending poison" lol This lady said " Please do not recommend Celeriac people with diabetes cannot eat it. I replied "Excuse me? There are plenty of people who can eat Celeriac me included. She asked me if I used my meter afterward, I told her yes and Celeriac does not spike my sugar and everybody is different. We have to test to see what we can eat, but plenty of people eat Celeriac on Keto..Keto recipes with it also. She came back at me " PEOPLE WITH DIABETES CANNOT EAT CELERIAC I AM NOW CLOSING THIS TOPIC" I could not believe it. She is giving people the wrong attitude to food. Surely it is up to people to try foods with diabetes to see what they can eat without the spike? I know the obvious such as high carbs, but one can eat tomatoes and spike and another will not. Many people on here on a under 20 grams of carbs a day eat Celeriac and it does not affect them like me, while others it may. I have been reading up on Celeriac apparently it has many health benefits and also regulates blood sugar.What are your thoughts on Celeriac. I love it and am losing weight on it and it does not spike me at all.
 
Has the lady been eating her celeriac in a large bread roll or perhaps a thick pastry crust !!!?
I eat plenty of celeriac and have no problem with spikes

Celeriac is one of the low carb veges - it is even listed in Atkins - so it must be right - :smug: - how would something which is so low carb not be right for diabetics?
I can't even think of any reason I would test after eating it - it is hardly an 'iffy' food such as oats.
 
Could it be a reaction to the rule of thumb that root vegetables are high in carbs?
 
She sounds a bit.... weird - but it's possible that because celeriac is a root veg that she assumed that because it's not above ground veg we shouldn't eat it. She obviously hasn't tried it and then tested for it.

I love it and it definitely doesn't spike my BG.
 
I have read, somewhere, that celeriac is a swollen basal stem, rather than a root, but you could have fooled me, looking at the stuff. We do eat it, but haven't tested for a long time.
I've just googled "carbs in celeriac" and the answer seems to be 9g per 100g, but perhaps this includes indigestible fibre.

I eat celeriac pretty well every day, chopped up in small pieces in my salad. It give salad a nice crunchy texture. I also use mixed seeds for the same effect. Both these may have slightly higher carbs than one would wish, but it's inconsequential when you only have a few grams in total.
I don't do all the before and after measurements. I have been doing keto for a year and measuring everything. Now, I just eat what I know is OK and will keep me under 20g carbs/day, my ketones over 2 and my fbg below 5.

She was the Admin of this keto/Diabetic page, yes very weird quite rude really. She was like the carb police ha ha ha..but because I was politely trying to point out to her that many Diabetics do eat Celeriac and many on YouTube use it on a Keto diet, she got very angry lol. I also told her that Celariac is lower when boiled. Usually, the carb count is in raw form. She actually shut the topic down so that I could not carry on the conversation. I thought "How dare she dictate to others what they should be eating. On here people advise and encourage us to test to see what we can eat,she was like a Nazi and was having none of it lol

When you look at all the nutritional value in the supermarket's list it says 2.3 gram per 100 gram. Yes it may include the fibre as you say. I eat it at least 3 times a week and have lost weight on it,also does not spike me either

Ha ha ha ha I am now wondering what other wrong information she is giving those poor people lol
 
I love celeriac... doesnt spike and makes fantastic tasting sort of chips with Fish. It is so, so tasty.
Initially though it did give me and hubby chronic stomach pain... did a post on it years ago on here. However, then I think I had it with meat... which I dont eat anymore due to travelling in colon and celeriac is good for bith of us.
Good as well as it gives different nutrient values than eating greens...

It was their delicious celeriac recipes that got me started on the lovely stuff.
Now I am using it in soups, stews, curries, as mash, raw in salads, and expect to use it even more widely in future.
It hasn't spiked my bg yet, whereas most of the other 'root' veg do.
 
Although it is called 'celery root', biologically, it isn't.
But - bananas are - biologically - berries, and what are called berries at the supermarket, are not.

It makes really lovely bubble and squeak when mixed with a bit of mashed Swede.
 
Note to self: try that there celeriac stuff. Done.
 
Makes great 'chips' - cut in to chunky chip shapes, part boil then turn in oil, sprinkle with smoked paprika and garlic - bake for half an hour until golden.... yum!
