Chicken and leek soup

Hello all,

Could someone point me in the direction of Wiflibs (Libby's) chicken and leek soup recipe please, can't seem to find it anywhere :?

Thanks, Debbie

I can't remember where it is, but I copied this down:

Slice up loads of leeks (I put about 3 big ones in the pot and a bit of garlic), put in a large saucepan with butter and fry until soft. Add a stock cube, boiling water and as much chicken as you can get in (I sometimes pull apart a whole, pre-cooked one). Add any seasonings you want and just leave to bubble away on the hob for a good 20 mins. The leeks become soft and delicate and it's like a cross between a stew and a soup. Sounds quite simple and boring but it's incredibly nice.

Hope this helps!

Mmmmm ... leeks on the shopping list today ... forgot all about the lovely leek. Luv it fried in butter with a bit of onion and garlic. The soups sounds shhhlllleeeerrrrpppy :D

When MW made it for me she also added double cream. I was ecstatic.

Love chicken soup but not had it with leeks, I'll get the Mrs straight onto it

**** right I would. You need to put some kind of warning message out with the recipe. :D

Libby's chicken and leek soup is the dogs bol.... tail! When my appetite was really bad on Metformin, I made it, and it was one thing I could eat. It's bl**dy lovely!
