As those of us with Type 2 Diabetes we should be cutting down on carbohydrates. Natural fats such as the fat in meat, dairy, olive oil and avocados etc is ok. What we should avoid is the carbs in breads, rice, pasta, potatoes and anything made with flour. These are the things that can raise out blood glucose levels. Very few people see a rise in bg levels from fats.

I do as I please, I eat it if it’s hot and crispy, I don’t like it cold so take it off!

I never eat it but that's psychological. (We had chickens when I was a child and my job was plucking. The smell never leaves your memory.)

Yes with much delight too... so long as it's hot and crispy.

Interesting thing here in my household. The chicken skin never makes it the table.
Somewhere between me taking it out of the oven and letting it “rest” before carving, it vanishes.
One of the joys of low carb.

I love it crispy but not cold or soggy - however I have two little four legged partners in crime who given the opportunity will eat it whatever its condition.

You're not obliged to eat anything you don't want to, so it's a matter of choice, but as a T2 fat is better for you and your glucose levels than carbs.
