Sweet Potato is not low GI, they are medium between 55 - 70 on the GI scale.
Having tried them both boiled and baked they hit my Bg levels for six !! The carb content is around 18.4 carbs for a very small 90g boiled SP.
GL value (which is a far better indicator of what it does to Bg levels) of that little spud would work out 65 x 18.4 / 100 = 11.96 GL which is classed as medium Glycaemic Load. Portion sizes are everything. The starchiest root veg should only be eaten in moderation.
As most of the spuds are around 250 to 300g weight. That would mean 1 baked SP is:
270 x 55.2 /100 = 149.04 :shock: Anything above 20 is considered HIGH GL. So, as far as I am concerned they are definitely OUT ?
