Celeriac & squash roasted in butter. Very tasty.
All with about 3 g carbs instead of 50 for potato chips.

I make sweet potatoes into chips. (Low G.I.'er). Wash the potato, do not peel, cut into thick rounds, coat with olive oil, sprinkle with rosemary and garlic. 15 mins in moderate oven. :P
 
I can do small quantities of parsnips but I know someone who can't even be in the same room as one without spiking.

Likewise I can do sweet potatoes better than the normal kind, but test!

Hmmm, might be visiting the greengrocer tomorrow with some new ideas . . .
 
Wow! I love to try it tomorrow! I miss chips since i was diagnosed last October 2008. Thanks..Cathy! :D

In this house they have always been known as parschips. You can also par boil, roll in parmesan cheese, pop in the freezer for a short while, remove from freezer and brush with olive oil before oven baking.

Even better with parsnips and sweet pots and white turnips is to slice with a mandolin and make crisps. If the deep fat fryer oil is getting neat the end of its life its also worth doing beetroot the same way.
 
had some of the real McCoy last night, first time since diagnosis. What a let down, normal potato chips are sooo bland, I'll take the celeriac ones any day.
