I made it this afternoon, it is fab, if I didn’t know it was low carb I wouldn’t have guessed! It got Mr Rachox’s seal of approval too :hungry::happy:

Just checked my 2 hour post meal blood sugar. I had gammon, egg and veggies followed by the cake pictured. Blood sugar before meal was 5.6, two hours later 5.2! Makes the cake even better :happy:
