Chocolate truffles

Oh yumm.. I'm experimenting for Christmas .. I've just made some orange chocolate truffles with this recipe. http://low-carb-support.com/dark-chocolate-truffles-low-carb-sugar-free/
A lot easier than I thought although a bit messy trying to get them into balls.. I settled for ball like shapes :)
Only 1 carb each..I used orange flavouring from Morrisons. but I'll try Baileys next time and give in to the extra 1 carb.
Those are mini cupcake cases in case you think they are massive truffles .. lol

These truffles sound really yummy and I think I'll try some for Christmas :)

Love truffles, thanks for sharing. Daisy I am having problems finding a sweetener that doesn't leave an after taste. What did you use for the truffles?
 
I've tried several in my cooking experiments and have settled on one I get from Lidl. It's called Cologran, granulated one in the yellow jar and sucralose based. These truffles didn't actually need much sweetener at all (for me)
There is a red jar Cologran which is based on aspartame, but that isn't good for cooking and does leave a taste
 
I find xylitol has the best flavour. I actually think it tastes better than sugar, because sugar can go sour after your saliva has worked on it, whereas this never happens with xylitol.

Unfortunately, xylitol is poisonous to dogs, so I can't have it in the house. :(

So I use erythritol. But it isn't as sweet as sugar (so you have to use a bit more of it) and in large quantities is leaves a cool feeling in the mouth.

None of the others have ever impressed me. I either end up with weird aftertastes, headaches, insomnia or frequent toilet trips...
 
Thanks Daisy and Brunneria. I am in Australia and Lidl isn't here yet. It doesn't look like we have erythritol either. We have it mixed with stevia but terrible after taste. I have just ordered erythritol from iherb, so will let you know when it arrives.
