cocoa powder

Unsweetened cocoa powder should have a macronutrient profile as such:

per 100g wt:
cal, carb, fiber, fat, protein, GI
305, 58.0, 33.3, 14.0, 20.0, 20

That is from US label reporting method... so net-carb is 58-33=25 (per 100g)
the high amount of fiber gives it a low glycemic index, but still 25 net-carb per 100g.

However, it is fairly light in density:
1 cup weighs about 86g
1-Tb weighs about 5.4g (total weight)... therefore, about 1.3 net carb per Tb.

Fiber is close, yet they show half the available carb.
Protein is similar, but they show more fat.

the Waitrose product discloses "Fairtrade ingredients total 97%"
What is the other 3%?

Math check:
there are 9 kcal per g of fat
there are 4 kcal per g of each protein and carb

(25*4) + (9*14) + (20*4) = 306 (this jives with the first set of data I posted for kcal to macronutrients, and pretty much discredits nutritondata.self kcal amount)

for Waitrose:
(12.5*4) + (22.6*9) + (22.5*4) = 343.4 (close enough)

curious how they are getting half the carbs...

Could you make up your cocoa with almond or coconut milk instead??
I regularly use Alpro Almond (unsweetened) for my cocoa - sometimes in combination with double cream cream. If I'm making it milky I'll put cocoa, sweetener and about 1/3 mug of Alpro in the microwave to heat up, then fill up with water. Sometime I do the opposite. So IMO you can virtually do as you please to make it - so long as the resulting drink works for you!

If I'm making it milky I'll put cocoa, sweetener and about 1/3 mug of Alpro in the microwave to heat up, then fill up with water. Sometime I do the opposite. So IMO you can virtually do as you please to make it - so long as the resulting drink works for you!
