@Cornelio You have to start slow. How much insulin you end up needing per carb, varies person to person, whatever amount works is what you need. Keep in mind most of insulin is used by the first 3 hours, but some does keep working up to 5-6 hours after. Insulin taking, unfortunately does not mirror what our body makes and how well it does so.
So if you are eventually coming down to a more normal BG amount, it's more of a matter of timing. If you need to take more later, then it isn't enough.
