Cooking vegetables

Can anyone come up with tasty ways of cooking veg, I hate boiled veg with just butter on. I'm not to keen on them anyway just need something different.

What sort of things are you trying/hoping to cook ? Do you like cauliflower ? I have excellent results with Cauliflower Cheese. Have you thought about roasting swede or celeriac (I prefer swede and it's so easy).

What have you got and perhaps we can make some suggestions..

Isn't swede high carb? I never eat it because of that. Yes I do like cauliflower cheese, how do you make low carb sauce?

No swede is really low. It's 1.4g per 90g.

I peel it and cut it in to chip sized chunks. Then boil it for 8 minutes and then put it in a pan in the oven with oil to roast for 25 minutes.

For the cauliflower cheese, break off some florets and put them in to an ovenproof dish and cover with tin foil. Bake for about 20 minutes. Then take the foil off and pour on a mixture of boursin and creme fraice or double cream and then grate cheese over the top. Pop it back in for 10 more minutes.

I mash cooked cauliflower and then add a handfull of grated cheese, its perfect when everyone else is having mash. Also I like courgettes, green beans and brocolli boiled up together with a tin of tomatoes and a stock cube crumbled in (depends on your sensitivity to tomatoes of course). I serve brocolli with spaghetti sauce or with a curry instead of rice or pasta.

you can make a simple thai curry with any veg. Stir fry the veg in some thai curry paste for about 2 mins, add some cocnut milk to just cover and reduce to the consistancy you like. You can use red, greeen or yellow paste, any adjust the volume of paste to adjust the heat you like. You can even add some nuts to the mix if you like.

I love celeriac or butternut squash chips. They are much nicer than potato chips I think. I also love cauli mash and also cauli for the basis for a sauce like a cheese sauce. I never ever boil veg, I always steam to keep the vitamins, minerals and other good things in the veg and not the water I chuck down the sink, now I don't make gravy with it.

Chop, season and drizzle with olive oil and bake in the oven until the veg is cooked, I like to throw some fresh garlic in with the veg to give it extra taste.

Roasted cauli is good, think Jamie Oliver did one if you google it. Swede can also be made into hash browns the same way as spuds. Roasted winter veg is nice as is summer veg, like aubergines, toms, onions, mushrooms, courgettes. Lots of olive oil salt and pepper.

To many to mention.
I love Savoy Cabbage or spinach, lightly steamed then put it in Wok with creamed cheese and panacheta ham, add seasoning to taste. I generally have it with Chicken or Steak. Another one with Cauliflower is rice, this goes great with your curry's and I think it's great alternative to Rice, just grate your florette into microwavable bowl and zap for about 40 sec on full power or to your taste you can have it crispy or soft.

Better to do cauli rice in a processor, less messy.

Dare I mention the Microwave Oven.

Is the humble mushroom classified as Vegetable or a Plant.

However mushroom's are a great additional to any meal.

The only good point I can make about the Microwave is, " if you cover the veg with pierced cling film and a microwave lid, prior to cooking you don,t get that strong smell ".

Also if you can't stand eating veg, then it's time to try those home made Smoothies.

Roasted butternut squash and sweet potato is lovely. It's higher in carbs than some other options, but tastes delicious! Throw in a red onion and some garlic and serve with a bit of goats cheese on top :)

Alternatively, try vegetable bakes. Pick your favourite veg and bake in a tomato or creamy type sauce. Or you could try ratatouille. Or soups.

Loads of different things that you can do :)

I never boil veg
I steam mostly;in a steamer that sits on top of a pan of water. I find the veg tastes better that way.
sometimes I stirfry. With things like French beans, I may blanch in steam for a few minutes first.
Carrots I glaze. I slice them thinly on a mandolin . put into a pyrex bowl with some butter [loads of butter actually] and microwave for about 3 minutes. You have to check and alter times as it depends on how much carrot you have.
Frozen peas are something i'm a bit careful with for carbs, but those I micro for a couple of minutes only.
Last week on holiday in Edinburgh, we ate at the zoo. there I had a turkey slice with a mix of sliced courgette,French beans and mange tout. Tasted great.
courgettes are delicious sliced thin and fried in lard.
Peppers done in Carluccio's way are lovely. De-seed, slice into 1cm wide slices. arrange on baking tray, drizzle with olive oil and garlic crush. bake at high temp, checking every few minutes for appearance of scorch on pepper slices. then they are done. use red, orange, yellow and white peppers. Green and purple ones go bitter if cooked this way.
