Delayed reaction

Can some foods take time to raise your BS levels? I had a corn on the cob last night, and my BS levels were fine, my fasting BS this morning were fine, I had the breakfast I've been having lately that keeps my BS low, but two hours later this morning, my BS had doubled. Could this be a delayed reaction to the corn?

What was your Bg level this morning before the breakfast and what was the breakfast ?

A Corn Cob whilst medium on the Glycaemic index is high carbs ( 22.4g ). If your fasting Bg this morning was low then I don't see how it could have been the Corn Cob ? This would have been processed way earlier.

Hi Ken. My fasting BG this morning was 5.2. I had a Wasa cracker with sugarfree marmalade and a coffee with Weight Watchers creams, and two hours later by BG had gone up to 10.8.

That morning reading of 5.2 discounts your Corn Cob as the cause.

Do you know the Carbohydrate value of all of those items. Sugar free jam does not mean carb free.
Weight watchers biscuits also have a carb value. Depends how many you ate ?

1 Wasa crispbread 7.3g carbs in my book !!! Add them all together and we might get a lot of carbs which is not good for your Bg levels.

Can you read the packaging and give us the values so we can see what is going on ?

Thanks Ken. I have been having the Wasa crackers for breakfast with the same sugar free jam before, and my BS has always been low up to now. I thought the net carbs for each cracker was about 4? I wasn't eating WeightWatchers biscuits, I was using their cream for my coffee. I just can eat protein for breakfast. Can't look at all the values on the labels now as I'm at work, but will look tonight.
