Your intolerances are quite specific. I am wondering if you have an enzyme deficiency that is working against you. The one that comes to mind is Lipase from the pancreas, and this can be genetic. Lactase deficiancy can also be a possibility.

But you are also intolerant of most proteins, so there are other enymes that may be not working properly. These are not normal diabetes related problems, and require specialist input for diagnosis. You need to discuss this possibility with an endocrinologist, since the average physician will not have the training to check this out.
