Your intolerances are quite specific. I am wondering if you have an enzyme deficiency that is working against you. The one that comes to mind is Lipase from the pancreas, and this can be genetic. Lactase deficiancy can also be a possibility.
But you are also intolerant of most proteins, so there are other enymes that may be not working properly. These are not normal diabetes related problems, and require specialist input for diagnosis. You need to discuss this possibility with an endocrinologist, since the average physician will not have the training to check this out.

PS Protein shakes can induce diarrhea especially the whey protein shakes, Thinking of your need for liquid diet, could this be responsible? Maybe try the pea protein ones?
 
A list of foods I wish I could work in to eat--

Pizza slices
Sub sandwiches
Egg salad
Chickpeas
Spaghetti and sauce
Meatloaf
Shepherds pie
Tortoire pie (spelled wrong?)
Egg and cheese and round flat breakfast sausages on English muffins
Lettuce tomato salad with a dressing maybe ranch

(Yes these may not be the healthiest but neither is the very salty soup I have to eat plus it includes some of my intolerances)

I guess we are still allowed to dream. Diabetes can't take these from us.
Sadly many of these, in the usual form, are thing few of us type 2 can deal with regardless of other issues. There are alternative ways of making pizza, sandwiches, bolognaise, Shepards pie etc and sausage are possible if you choose the right ones.
Do you cook from scratch so you can choose the ingredients you want or rely on canned food?
