Type of diabetes

I have made a decision to drastically reduce carbs, I was doing OK initially, although it was difficult as I love bread, pasta, cereals etc. I have now become bored my new restricted diet. I would love to hear some fresh ideas from those who have lost weight by cutting carbs.

It does take a bit of effort as I’m cooking more from scratch than I used to. I have discovered low carb alternatives such as cauliflower rice, Explore Cuisine pasta alternatives, HiLo bread. Have a look in the low carb forums on here. I’ve found loads of tasty recipes there. Your diet needn’t be boring and restrictive.
 
I have two fridges and both were stuffed full to bursting before Christmas, I also have a huge chest freezer and that was full too. I was spoiled for choice.
There are all the salad things - tomatoes cucumber celeriac celery pickled onions or spring onions beetroot radishes various leaf mixes, coleslaw, then mushrooms, sweet peppers, courgette, my favorite stirfry, cauliflower, beansprouts, swede, sprouts, turnip, in the freezer I have mixes of veges, always looking for the lowest carb ones, various frozen fruits, again, seek low carb options, and fish, meat, shellfish - Lidl protein rolls, then there are the cheeses and eggs, pate and cooked meats.
I don't really perceive any restrictive diet when I think about what I eat.
I have lost over 40lb without even thinking about weightloss, just keeping my BG levels low.
