Dinner surprises without CGM

So my Libre trial ran out and I’m just using a simple finger prick test some mornings and about 2hr after new meals so I can see how they affect blood glucose.

I was missing pasta a lot today so I found a simple recipe online (32g each of lupin flour and wheat gluten plus an egg) and made my own tagliatelle with a rolling pin and a knife. Lots of fun. Great big portion same calories as regular pasta but 44g protein and BG was only 5.3 2h after eating it. Oh and it tasted good as well.

The only caveat I would put on your excellent results is that- depending on what else was in the meal the spike may have occurred later than 2 hours I've seen it described as the pizza effect. The amount of fat consumed may delay the absorption of the carbs.

Any idea what your total carbs were (including whatever you put in the pasta)? I have just bought Lupin flour and have yet to experiment so I was very interested in your post.

Where do you buy your lupin flour? I’ve been wanting to try this but it seems expensive to experiment with.

I bought mine at Morrisons. I live rurally and don’t have a car, and rely on deliveries so my options are limited.
 
I too make Lupin flour pasta, mine is 45g Lupin flour, 35g vital wheat gluten and 1 large egg.
I use half of the dough and freeze the other.
Half the dough is 4 carbs.

Also use the whole dough to roll out flat for lasagne sheets. Hard pushed to tell the difference from regular lasagne.
