Hi, I'm a T2 dad with a five year old T1 daughter. We've got our own made up coffee shop that serves us espresso and babyccino. We enjoy baking together and would like some suggestions for easy, low carb cakes that we can make with coconut flour. Little cakes, so we can have a whole one to ourselves. Thanks.

Have a look too in the low carb recipes thread. I posted a list of various combinations of ingredients for microwaved muffins that you could adapt. I've never got on with coconut flour but use ground almonds, flax seed, sesame flour, and grind up my own hazelnuts instead. There will be a lot of recipes online too for low carb muffins/cakes in a mug, and these will be easily convertible to fairy cake/cupcake size for little girls. Use suitably sized little paper or re-usable silicone cases.

Found this recipe for Banana bread which has no added sugar and a good way to use up bananas,blacker the better. The whole loaf is 215 carb,according to recipe breakdown.I had a slice for breakfast with butter and bs 2 hours later was 6.8 ,fasting earlier was 7.8 . It was moist with a cake texture .I added some chopped walnuts,recipe suggested adding 2oz of sunflower seeds to mixture just before baking

4oz butter, 1tsp bicarbonate of soda,2cups whole meal flour,2eggs beaten,3 very ripe bananas,2-3 tbsp milk.
Preheat oven 180c, grease loaf tin 9x5.Cream butter in bowl until light and fluffy.Sift bic soda with flour &Ladd to butter alternating with whisked eggs.Peel and mash bananas ,stir into mix and add milk to make a dropping consistency .Spoon into tin and bake for 1 hr 15 mins or until skewer comes out clean
