Eggs are okay!

Emu eggs are really good I have been told, they are the equivalent to approx six chook eggs.

Plenty of omelettes out of one egg.

They are available at many of the Emu farms.
 
One of my cousins had emus-we had to ask him not to bring us any more eggs because we couldn't eat them all before they spoiled. He spent a lot of time chasing them down the dusty gravel roads as the cattle fences just did not keep them in.
 
Used to LOVE haggis... anyone know if there is a LC version out there?
(a bought one. my culinary enthusiasm does not extend to DIY haggis stuffing)

A local butcher makes haggis in my city. I asked if they would make some without oats. They declined. I still eat haggis at Robbie Burns dinners despite the oats. I do not think it's all that high in carbs.
 
It gets a bad press outside Scotland, which I have never understood as it is a really good supper dish...

People are simple put-off because it's offal, the thought alone turns them off, much the same as black pudding, I love both :)

Mind some of the supermarket versions of the two are truly awful, you can't beat a proper butchers shop haggis/black pudding where its made on the premises.
 
Haggis is the stuff of life. Essentially oatmeal and a lot of bits of pig/sheep that are left over, offal and the like and a heavy dose of seasoning, popped into an intestine tube to make a large sausage type, which is then steamed/gently boiled and served with potatoes (tatties) and neeps. It gets a bad press outside Scotland, which I have never understood as it is a really good supper dish... don't have so many of the tatties myself though.

My dad (born in Gallowgate) used to love haggis and loved all the traditional Scottish foods often cooked by my mum (born in Lochwinoch)

My three egg omelette with water cress, peas and Stilton last night was a topper... and the eggs were double yolkers... :)

In the good old days when I was a child, eggs were perfectly acceptable as an essential part of our diet, and the advice used to by "Go to Work on an Egg"! One of those catchy advertising phrases that's forever memorable. :D

I'm not a great egg lover and tend to prefer mine buried in things like low carb muffins or pastryless quiches, but my weekly omelette always gives me one of my lowest post meal glucose readings. Certainly for low carb diets they're very neat little packages of protein, and I believe that the anti-cholesterol brigade and the big salmonella scare did the egg "industry" a great disservice.

My ole dad, 93, used to tell me the story of how his mother used to boil a soft boiled egg and all the children then had it wiped around their mouths, so it looked like they ALL went to school on an egg for breakfast ( don't know how really true that was, but they were a poor family) still love the story :D

Sorry I did not answer earlier, but I see others have answered for me. It's simply the best breakfast dish I have ever had.

Eggs poached in a spicy tomato sauce. with Feta either added in or as a garnish on top.You can vary it it to your own taste.

I agree !!
I had it yesterday for breakfast. Before I add the feta or greens I freeze half the sauce.

Ooh! I love feta, eggs and tomato sauce-not so much spicy though. I will look for a recipe. Everyone at my house loves eggs. What greens do you add?
 
I wish I liked eggs. OH has a cheese omelette quite often and I keep trying a little bit to see if I like it but no. How can I hide the eggy taste.
 
I love eggs. I have just made a big bread tin of eggs with quark over chicken, mushroom and shallots in the oven for half hour. It's lovely. Have boiled eggs most days and you can't beat a fried egg imho. I'm struggling with carbs atm because I'm not a fan of 'above ground' veggies at all. Eggs are my go to. Makes for some strange combinations on my plate lol. I'm sure chicken and eggs on the same plate is pretty weird lol

Had some of this while backpacking round Ireland a number of years ago. Funny enough, just sliced & fried with an egg on a camping stove.. Lovely! http://www.clonakiltyblackpudding.ie/products/clonakilty-blackpudding
