Endocrine system, metabolism and all that

Can anyone recommend some good simple reading as a starting point for getting my head around what is actually happening with the food I eat? I have no scientific background so I need to start from the basics and understand this sort of thing:

what is a metabolic pathway?
how is fat processed, how is that different to carbs?
what role does the liver have in processing food?

I am convinced low carb is the answer ... but I need to understand more if I'm not going to wander about making stuff up and getting it wrong.

In the meantime I am stock-piling all the links you guys post in the hope I can eventually read some without the medical dictionary at my side!
 
I found Charles Clark's book the "Diabetes Revolution" has some great diagrams in it that help to explain how insulin resistance and the biology of diabetes works. The section looking at the science isn't too long and it isn't full of medical jargon and it covers your questions. The recipies in the back are a bit carby tho...

if you want to know more, Blood Sugar 101 is great. Jenny Rhul, the author, writes well and explains things very clearly, although she is American and some of the numbers used to measure things are different as we use differnt scales in the UK/USA, however, she has added UK measurements to a lot of the pages. Her site is free, although all the info is available in a book you can buy. I love her site.
