Can anyone recommend some good simple reading as a starting point for getting my head around what is actually happening with the food I eat? I have no scientific background so I need to start from the basics and understand this sort of thing:
what is a metabolic pathway?
how is fat processed, how is that different to carbs?
what role does the liver have in processing food?
I am convinced low carb is the answer ... but I need to understand more if I'm not going to wander about making stuff up and getting it wrong.
In the meantime I am stock-piling all the links you guys post in the hope I can eventually read some without the medical dictionary at my side!
