You don't count carbs and in other posts you state that high fat is bad for people. You certainly do things different from most members and I am not sure that you are coping well with the diabetes? I am also wondering if you should be handing out advice to other members?
Maybe I'm on ignore now, maybe I'm not.
As to carbs, and control, I've just spent 5 hours working.
So, it's been hot, not overly strenuous, but enough stepping up and down, and general exercise, cleaning and polishing the car. Well, more detailing. Heavy polisher, so some good arm work in there as well.
Not counting the carbs, but eating chilled fruit and ice cream, (bought), and drinking lots of water, because it was very sweaty. (I kinda need a shower now).
So, as I say, not accurate count of what I've eaten, as I know I didn't eat more than I was working off.
And drinking a lot when I was thirsty. (No added salt if it matters)
I personally don't count, as I know myself, and don't need to, it took me a while to sort out, but I always advise others to find their own method, and there's no quick fix. You're going to be stuck with it for life, so it may as well work.
That's another reason why I don't try to force carb counting, and eating saturated fats onto everyone.
It doesn't suit everyone. You'll find most members have their own system, there's just a few more vocal ones that tend to be more visible shall we say.
As to control, I tested, as I thought you might be interested.

But now I'm sitting down, not exercising, it's be fish and salad probably, and maybe a beer.
But no red or processed meat.
