could you give us a little more info on what would be your usual meals for the day .
most of us do follow the low carb high fat routine low carb is generally around 20-30gr a day
it can take time for your levels to drop but it will happen when i was diagnosed my levels were in the 20's every day so be patient and dont worry to much as this can push your levels up to

breakfast example poached egg and bacon or sardines or some days a yougart or a piece of toast,
lunch tuna chunks or couple slices ham with green salad,
cooked evening meal 1/4 chicken with green veg, say broccolli or cabbage, one potato,
may have an orange or apple or some blueberries or strawberries.
i have 4 cups of cooffer a day and drink pints of water.
no food after say 7.30pm and go to bed just after 10.

Your carbs could be too high for what you can cope with, or possibly from foods which don't suit you. I find I am more sensitive to carbs from grain, potatoes, starchy veges and sugary fruit such as oranges or mangoes.
The toast, bread roll, potato, orange and apple would have my BG raised very quickly. I'd need to watch how many berries I ate, but also have fried eggs, use oil and vinegar salad dressing, and cream rather than milk in my coffee, because the fat seems to help quite a bit. I eat to my meter, have meals when I feel like it and stay up late.... I don't think that the last does me any good, but I'd not sleep even if I was in bed.

I do suffer from stress IBS which can be bad, I have learnt to recognize what i can and can not eat for both conditions, mashed potatoes is no no, cooked apples and onions mainly raw, eggs occasional allow myself one.
