Hi Cheflee and welcome to the forums. One of the rules on here is that no-one can or should attempt to diagnose. However talking about your own experience is fine, and that's what I'm going to do now.
I had quite painful neuropathy in my feet for some years before I was diagnosed. It was mainly burning, rather than stabbing, but there was a bit of that too. I had a couple of gout experiences in 2017 - gout pain is far worse. Both have thankfully gone - what's left of the neuropathy is just a bit of a tingle and I wouldn't call it pain.
I think what helped me was a very low-carb (keto) diet that got my BGs back to normal levels very quickly. That had an immediate impact on the neuropathy. I cut out any foods that raised my BGs too much - that meant stopping bread, pasta, potatoes, rice, pastry, sugar, fruit.... and I still don't eat them.
I found out what the problem food were (all carbs) by testing before esting and then two hours later. By two hours your body should have returned your blood glucose level to where it was before eating - if it hasn't, that shows there were too many carbs for your system to cope with. If that goes on, the level of glucose in your blood will stay high and get higher, and high blood glucose levels cause physical damage (which is where the neuropathy comes from). The body will also try to store the excess glucose as fat, so weight gain is likely.
Cutting out carbs breaks this cycle and lowers your glucose levels. Once you get back in balance things should stabilise.
