It does seem impossibly hard sometimes I know but the reality of T2 diabetes is that there are now some things you just can't have, not if you want your BG's to drop. Carb will always be converted to sugar in the blood and if you are insulin resistant that's just where it will stay. It does damage if not managed well so maybe it's time for you to review exactly what you are eating. Bread of any description is a killer for me, my bg's spike dreadfully but I can tolerate a bit of rice, some pasta and a small potato. I only found out what I could eat safely by testing, testing and ....you got it, testing!

Test just before a meal then 2 hours after, as close to 2 hours after as you can. Write it down if you have the time, it's a good way of finding out just what's causing you problems.
Problem is you see that it MAY be possible to tweak your old way of eating to suit but in reality it's probably going to be a whole new and, at first, confusing, way of living. On here you will find quite a few ways back to health not just Low Cab, High (Healthy really) Fat. Read all you can, be greedy for information. Knowledge is power and once armed with the information then you can make informed decisions and believe me, you will see your levels start to drop.
It will take work on your part but honestly the rewards are magnificent!
Ask any questions you have to and remember that there are no stupid questions just stuff we don't know the answers to yet.
Good Luck
