Really enjoyed reading all the responses you received here mrsmac247 and I ordered the book, Say No To Diabetes, someone recommended to you. I'm not familiar with UK authors. Looking forward to reading it. From the reviews I read, it's well referenced, and he studied under or associated with some of my favorite leaders in nutrition, who have now passed.
The book that got me started with a concise 30 page overview of the LCHF diet was Dr. Bernstein's Diabetes Solution (2011) by Richard K. Bernstein, M.D. Of all the books I have, it's also a great reference for a lot of other things too. Originally published in 1997, this book is now in its 4th edition.
I tried to summarize under another topic how I've done the LCHF diet over the last 3 months. (Tomorrow I get my lab results. Can hardly wait!) Oh, and as for vegetables, I'm one of the unlucky ones who are carb intolerant, so not able to eat fruit, but still eat big salads, and I eat vegetables with all meals. I am also able to tolerate some root vegetables such as carrots and beets in
small quantities with a meal. I also eat green beans!
