Food lists or particular diet, where?

Great! My egg/spinach/mushroom/butter breakfast was only 5 carbs, so not bad in my book. Salt is a good add-in, plus we need it more while doing LCHF.
This is something I am going to have to try now after reading this. Always considered that spinach was only for Popeye lol I just looked for the carb value and came up with the following............Spinach and other leafy greens are sometimes considered a "free" food on low-carb diets because they have so little impact on blood glucose. The vitamin K they are packed with may even have a positive impact onblood glucose, and some diabetics notice that it is easier to control their blood glucose when they eat a lot of greens. Note that 6 cups of raw spinach will cook down to only one cup of cooked spinach................so maybe just maybe Popeye was as smart as he was strong :D
 
It has a strong nutritional profile, that is for sure. As time passes, you will not feel so restricted by what you can't eat and really see how much you CAN eat. At least, that is the way it was for me. I realize that I could eat more full fat items that I would have never considered before (grew up thinking LF was the way to go) and that there was more than enough room for five servings of fruits and vegetables than I had originally thought.

Cabbage
Broccoli
Cauliflower
Green beans
Mushrooms

And that is it, in addition

Tomato
Ice berg lettuce
Roman lettuce

So if I did find some sort of guide I could maybe expand a little lol
 
@Mrsmac247 spinach is one of the veggies I prefer raw - I think they call the variety 'smooth leaf' when it's sold as a salad leaf - they're a smoother smaller leaf - I shred it in my salads. Full of iron and other goodies. Just look what it did for Popeye!

Watercress is another good one to try....either in a salad or wilted/cooked.....virtually no carbs and lovely peppery flavour

I eat most vegetables and can even handle a couple of new potatoes. Tonight I've got new potatos, asparagus an salmon with dill sauce.

We're having almost the same dinner. My husband is away tonight so got me a salmon fillet and I'll make some lemony sauce with it I think and some asparagus and green beans. I'm not going to having a 'carb portion' (i.e. potato etc.) as I have some rhubarb to eat up and I'll pop some of my low carb crumble on it. He'll be eating about three million calories in a restaurant meal, so it's only fair that I have a wee treat too.

@Mrsmac247 - you asked overleaf about spinach - I think there are the tender smooth leaf type that tends to be eaten as a salad leaf and then larger darker leaves that look like large crinkly dock leaves - I've never tried that myself, only the small finer one.
 
Really enjoyed reading all the responses you received here mrsmac247 and I ordered the book, Say No To Diabetes, someone recommended to you. I'm not familiar with UK authors. Looking forward to reading it. From the reviews I read, it's well referenced, and he studied under or associated with some of my favorite leaders in nutrition, who have now passed.

The book that got me started with a concise 30 page overview of the LCHF diet was Dr. Bernstein's Diabetes Solution (2011) by Richard K. Bernstein, M.D. Of all the books I have, it's also a great reference for a lot of other things too. Originally published in 1997, this book is now in its 4th edition.

I tried to summarize under another topic how I've done the LCHF diet over the last 3 months. (Tomorrow I get my lab results. Can hardly wait!) Oh, and as for vegetables, I'm one of the unlucky ones who are carb intolerant, so not able to eat fruit, but still eat big salads, and I eat vegetables with all meals. I am also able to tolerate some root vegetables such as carrots and beets in small quantities with a meal. I also eat green beans!
 
Thank you @Winnie53 for replying. I typed out a while message earlier but it seems as though it had disappeared!

I was saying that I had a look at the book recommended in the first post but that it contradicts with some of the principles of LCHF which is a shame because it allows some carbs back into the diet and gives a rating for its impact on blood sugar.

I shall have a look at the books you mentioned too, thank you.

I am also hoping to find the answer to my being tired or hungry. That is generally how I've been feeling these last few days one or the other!
 
And then there's the additional complication of the hormonal changes women experience throughout the month (so take that into consideration too)... :)
