I am not sure which recipe books you are referring to, but as you are considered type 2 and using diet only then adding in high carb foods like rice or potatoes would rather defeat the object.
Adding stirfry or low carb vegetables, or having a dessert afterwards would be the way to go. I used to check my blood glucose levels 2 hours after starting to eat to check that my food choices were appropriate.

Helen is referring to the fre recipe books in the members area here

I haven’t read all of the cook books Helen but if you are keeping your carbs lower then you could add salads and above ground low carb veggies. Things like cauliflower rice would be good with a curry or stirfry type dish. Cauliflower mash or roasted celeriac with stews & casseroles. Celeriac is one of the few good below ground veggies along with turnip & swede. Ribbons of courgette or chopped green cabbage are good for sauce type dishes like bolognese or chilli as they carry sauces well.

Hello, and welcome to the forums, Helen.

Are you intending to follow a diet with reduced carbohydrates? Many of our members with T2 diabetes, do manage the condition that way. As long as you are not on medication that can potentially cause very low blood glucose levels (hypo) it can enable lowering blood glucose to non-diabetes levels. The definition of low carb varies. I think the books you refer to suggest around 150grammes of carbs a day? Some people go much lower than this. The good news is that some carbs can be replaced with the healthier fats, and you can eat cheese, cream , and nuts, olives, and olive oil, full fat yogurt, too. Some members even have bacon and eggs and good quality high meat content sausages, daily. This is sometimes difficult to understand as it goes against all advice on ‘healthy eating’ we have been subjected to over the years.

This is a simple explanation of the Low Carb approach

The recipe books are , I believe, designed for a low carbohydrate approach. So the carb foods, e.g. rice, bread, potatoes, most definitely anything with sugar, and most root vegetables need to be excluded, or at least reduced.

It could be useful for you to have a look at the Low Carb sub Forum, to get a better understanding.

Also read around generally, for ideas, and ask as many questions as you like. Our members are generally willing and able to help.
