if you ate no more carbs, you will need insulin for the fat and protein as your body will break it down into glucose.
This is why I avoid very low carb meals - insulin dosing is too complex as it varies in timing and ratio for different types of protein.
I think supermarkets would be in trouble if their produce was so toxic. I think the problems are generally associated with wild or scavenged mushrooms. certainly my experiments with fly Agaric mush required that they be cooked. some mush are sought for their mescalin content, and these too can be dodgy when raw.For starters, how many decades have you eaten raw mushrooms without dying?
When was the last time you heard in the news of someone dying or getting dangerously ill from raw mushrooms (not counting people picking wild mushrooms without proper knowledge)?
Mushrooms are low in carb - I always allow about 3-4% by weight, so not very much for a standard portion, or added to a bolognese or stew.
