Have you tried keeping a food diary or using MyFitnessPal or similar? Do you count calories as well as carbs? Sometimes people eating low carb need to,watch their calories too.
Have you had thyroid checks? I've probably already asked that, but it might be relevant and need further investigation.
Are you keeping active on a regular basis? That can help insulin sensitivity.
You're doing fantastically with your blood sugars - I'm sure you can sort this too over time
What is your current BMI?
Also get your vitamin D levels checked and B12 too. Are you drinking enough water? Maybe your own personal ideal weight is more than 63kg? Maybe you need to eat more fat and a bit less protein? Just a few ideas.
Well done for getting your diabetes under control. That is by far the most important thing.

I got my b12 checked as Iv had that deficiency before not vitamin D though
