Getting serious about Low Carbs!

I'm trying to get to grips with a low-carb diet for my husband who has Type 2. He has a sweet tooth unfortunately and I'd like to be able to make muffins/cakes that he can have as a treat. Someone suggested using applesauce instead of fat and sugar - anyone here have a good recipe for them?

Also - low carb suggestions for things like white sauce (for lasagne)!

While he was still working it was a nightmare to prepare meals he could heat up at work - he was mainly restricted to meat and lots of veg, as they could be reheated in a microwave. When he was out 'on the road' he was at the mercy of whatever he could get at a motorway service station. Now he's retired and we're both at home I want to start the New Year with much healthier options (and things that are a little more interesting than plain meat and standard veg)

Can anyone point me in the right direction, please?
 
I tried many different food substitutes but of course, they rarely taste the same as the original and the memory is very hard to trick that way. You still remember things from your childhood, even if your tastes have changed over the years.

What I did was to find a number of low GI foods and then find dishes that I could make with them. Over time, I managed to 're-educate my palate'.
