Hi, just saw the offers from Aldi for 23/09/10 Ground Almonds: 99p for 200g

My recipe is:
2 dspoons ground almonds
1 dsp oat bran (recommended for reducing cholesterol)
1 dsp wheat germ
1 dsp crushed seeds
1 dsp dessicated coconut
about 200 ml soya milk (cow has 5% sugar)
in a glass jug
mwave for 2-2½ mins
stir
mwave for 1-1½ mins

I sweeten with 1 saccharine, & add fruit sometimes - blueberries or stewed apple of dried apricots.
About 10-20 g carb.

I'm going to have to try all the ones I found ( including yours, thankyou ) to see which one I like best. Some of them have eggs in as well, which might be heavy but we'll give 'em a go. I am keeping a recipe book of low carb meals that work for me but it is rather light on the breakfasts.

Here's a recipe for Almond Puff Pancakes
2 large eggs separated
1/4 cup double cream
1/4 teaspoon splenda
pich of salt
1/2 cup Almond Flour (ground almonds)
1/4 teaspoon baking powder
1 teaspoon butter ( for frying)


Mix egg yolks, cream, sweetener, salt together in a bowl til smooth. Combine Almond flour and baking powder, add egg yolk mixture. Whisk whites til they form peaks ( i stick in the food processor) add a quater of the whites to the yolk mixture to loosen, add the rest but be gentle.

Fry a couple tablespoons of the batter as you would normal pancakes. They are nice with butter and coconut or berry syrup.

Is there any difference between Ground Almonds and Almond flour? I've got some gound almonds at home, and they're not ground fine enough to be anything like flour.

Maybe sticking 'em in a coffee grinder would get them down to a more floury texture? Is doing this necessary, or do ground almonds behave like flour anyway? (ie, soak up liquid and turn into a type of dough?)

Ground Almonds and Almond 'flour' are the same thing. You could grind them yourself, works ok but i find that it's had to get them as fine as you need them, it will work with a standard processor but there is a slight difference in the texture of the final product. it could be just me though, try it and see.

I just buy ground almonds from the home baking section in Tesco, works a treat.

Instead of porridge you can use ground almonds in a 'meusli' which doesn't need cooking.

The usual ingredients to make about fourteen servings are:

500g. toasted soy bran (Holland and Barratt)
300g. ground almonds
150g chopped mixed nuts (Morrisons are good value)
sunflower seeds, flaxseed etc. ad lib.
salt and sweetener.
soy milk and a good dash of double cream.

Other brans like oat or wheat can be used instead of soy, of course, but their carb count is much higher, if the listings on the packets can be trusted.

From memory (it's years since I calculated it) the carb content is about 6g per 70g. serving.
