Ingredients for 2
1 whole pepper per person. Colour of choice. I like the reds, yellows and oranges. Husband likes the Green.
about 400g minced beef( just under the pound)
1/2 medium onion finely chopped
1 clove garlic crushed
1 thin slice bread, salt, pepper
I litre tomato juice
shlurp red wine.
splash Worcester sauce.

Equipment.
Food processsor, or large bowl
casserole dish.
Microwave (optional)
Method
I use a food processor, but hands will do
Process bread, onion, garlic and meat and 1/2 tesaspoon salt, or mix thoroughly by hand after crumbing bread.
Take stalk out of peppers with sharp knife and clean insides.
Fill pepper cavities with meat. If any left over, roll into meatballs
Put filled peppers and meatballs into casserole dish.
Mix tomato juice with wine and Worcester sauce, season with salt, taste, you can sweeten with Splenda, if you like.
Heat sauce in microwave, pour over peppers
Put in slow oven for 2 hours.
Serve with Dreamfield pasta shapes of your choice.
Comes out about 10 carbs per portion.depending on the size and colour of your peppers. Green are lowest,red highest.

for those of us that aren't good at oven temps... what's the slow oven temp!?

That sounds nice, i like peppers! (but i like the reds and yellows!) (and greens).... (orange too) :mrgreen:

Oh yeh... you should post some photo's along with these recepies!! i bet they look nice too!

That sounds delicious, Hana. My wife makes stuffed peppers but she uses a little cooked rice instead of bread. Each pepper contains so little rice that it is very low carb. I'll have to get her recipe. I usually do the cooking at home, but she prepares this dish so beautifully that I don't even try it. How can you improve on perfection?

Slow oven 150 - 180 C, nearer the 150

I use a similar recipe but gently cook the mixture before stuffing the peppers and then finish them in a combi microwave. It saves a lot of cooking time (and gas.)
