I'd disagree with that.
Low carb food can be very tasty and cheap too. Yesterday, for example, I bought a pack of Sainsbury's 'Cooking Bacon' @ 670g for £1 (sort amongst the packs until you find one that comprises large chunks of bacon without too much fat). I diced it, soaked it in cold water for 5-6 hours to remove a lot of the salt, and boiled it for an hour with a couple of tablespoons of 'Italian Herb' mixture and some garlic powder.
I then coarsely chopped and added all the veg I had left over in the fridge:
Half a head of celery
Half a swede
3 mixed peppers
1 pack of green beans
1 celeriac
2 leeks
3 onions
I gave it another 45 mins boiling, whilst adding a couple of ham stock cubes to taste.
IMHO, v. tasty and 2 hrs after eating it my BG level was back to 5.4. I haven't counted the carbs but they can't be that high. You can vary the taste and texture, by missing out some of the ingredients and adding others - such as curry powder, cream, polenta etc., or liquidise the whole lot and have it as soup.
Last night's cooking made about 6 portions, some of which I'll chill for later in the week, the rest I'll label and freeze.
My late father put me onto the 'see what's in the fridge etc. and fry/stew/bake/casserole it all up' style of cooking when I was a youngster and it's worked well for me ever since. The only downside is that sometimes, when I end up with something people say is
really good, I've forgotten what I've added, or in what proportions.
Give it all a try - it's easy on the pocket and you might be pleasantly surprised.
