I love when I go low carb it's great on my diabetes but I can't stick to it as I can't cook and don't like much food. I don't know what to do. Breakfast is the only meal I can low carb for then I never know what to have for lunch and what to take to work in the evening.

I can't eat salad it gives me terrible heart burn. I was thinking of attempting to make Vegetable soup or something and then just eating veg and meat. I don't like fish.

Can't eat nuts either, they give me stomach. ache.

soaps on telly and people talking about the characters as if they were real.
If you put your mind to it, I'm sure you can find foods that suit. Learning to cook is the key. It's much cheaper too. A learn to cook book for Christmas might be a starting point. One of the very basic ones from Delia or Marguerite Patten. Or something more modern like Hairy Bikers. Do a search on Amazon and hunt till you find something that appeals.I haven't looked, because Ihave dozens of books and I'm established on low carbs, but there's probably a low carb learners book out there.

Soup is really easy to make but I don't now how low carb mixed vegetable soup would be depends what you use I suppose..don't low carb myself just eat a low fat diet with restricted starchy carbs so not sure on that

The other day I made cauliflower and leek soup it is gorgeous and I always make enough soup to freeze for other days. I think that would be low carb as cauliflower is recommended as a subsitute for potatoes on this forum. I know people who will not eat cauliflower as a vegetable with a meal.. my daughter for one.. but love this soup

are you on diabetic medication, this could be the cause of your heartburn and indigestion problems as happened to me ,GP took me of the diabetic medication and I started on the Newcastle diet, this was for 11 days now on a low carb meal as well, your soup looks very nice but i just ate for tea a large chicken breast dry fried ,a doz brussels with best butter, a small carrot and a small pork sausage, followed by a large slice of fresh pineapple. so I will try the soup tomorrow .

If you include cucumber in your salad try removing the skin to see if this helps with the heart burn.

I was much like you with salads then read an article that said the above, never been bothered since so you might want to give it a go...

It's a very difficult diet, I think very restricting in foods. I did try it but after a few days I couldn't carry on with it. So I just eat normally now. If I exclude the foods you are meant to in a low carb diet I'd have nothing left to eat!

Soups don't have to be just veg. Try this recipe for beef, shallots and tomato http://www.rivercottage.net/recipes/hug ... and-tomato

I use a tin of chopped tomato rather than puree or passata and then add a few whole cherry or plum tomatos 15 mins before the end.

The main thing is to use shin beef and cook it very slowly. The connective tissue and gristle all breaks down over time and it makes a rich gelatinous and thick gravy. make a lot of it because you can freeze it and even add curry spices to it later if you want a different taste. I also add pearl barley which has a very low GI or you can have a small amount of couscous if you want some carbs.

There are a lot of suitable recipes about.

We are all so different aren't we :) Personally I find Low Carb very easy, it suits my body and my pocket, lol. I also get to eat what I would call major treats if I was on a calorie controlled eating plan... eg cheese, and cream in my decaf coffee.

I'd disagree with that.

Low carb food can be very tasty and cheap too. Yesterday, for example, I bought a pack of Sainsbury's 'Cooking Bacon' @ 670g for £1 (sort amongst the packs until you find one that comprises large chunks of bacon without too much fat). I diced it, soaked it in cold water for 5-6 hours to remove a lot of the salt, and boiled it for an hour with a couple of tablespoons of 'Italian Herb' mixture and some garlic powder.

I then coarsely chopped and added all the veg I had left over in the fridge:

Half a head of celery
Half a swede
3 mixed peppers
1 pack of green beans
1 celeriac
2 leeks
3 onions

I gave it another 45 mins boiling, whilst adding a couple of ham stock cubes to taste.

IMHO, v. tasty and 2 hrs after eating it my BG level was back to 5.4. I haven't counted the carbs but they can't be that high. You can vary the taste and texture, by missing out some of the ingredients and adding others - such as curry powder, cream, polenta etc., or liquidise the whole lot and have it as soup.

Last night's cooking made about 6 portions, some of which I'll chill for later in the week, the rest I'll label and freeze.

My late father put me onto the 'see what's in the fridge etc. and fry/stew/bake/casserole it all up' style of cooking when I was a youngster and it's worked well for me ever since. The only downside is that sometimes, when I end up with something people say is really good, I've forgotten what I've added, or in what proportions.

Give it all a try - it's easy on the pocket and you might be pleasantly surprised.

There is not a great many foods I like so that's where a low carb diet is difficult for me! I don't like many vegetables and all meat is expensive to buy.

How about eggs. They are almost perfect blend of protein and fats. If you want to reduce the fat a little then make scrambled eggs or omelettes with 2 whole eggs and one or two egg white. I have eggs practically every day and I buy a carton of egg whites as well - a dozen eggs and a carton of egg whites lasts me a whole week.

Omelette with spinach is very good, also onions, chillis, peppers, rocket etc.

What do you normally eat?
