HELP help and triple help!

Right where do i begin, been on what i hope is the right sort of diet for the last week i know some of you are going to say early days still waiting on the 2nd blood appointment to confirm that its type 2 but doc is pretty adamant it is, sorry to waffle on, sooooo been what i think is pretty good with diet i work 12hr shifts in a care home so food eating at work is a bit hit and miss but have tried to keep carbs down, my self testing blood was 20.8 last Monday morning and now most mornings is 12 something how do i get it lower, im eating burgen bread on average 1 or 2 slices a day( tend to use this as a treat before bed with peanut but), porridge or bacon egg for breakfast had alot of salads for lunch (getting a tad fed up with them) and then meat veg and small amount of potato, pasta or rice for dinner, low sugar squash or water to drink,fruit wise a apple on porridge days and little pots of melon think ive had 2 yoghurts this week to anything else i can try? also im on a limited budget and so far finding this an expensive way to eat, while i know health is important so is the money. any suggestions on it all and also different things i could eat like what to do with mince etc, i dont drive so getting to a decent supermarket that has decent veg etc is a issue to.
 
Porridge, pasta, potatoes and rice will certainly raise your BG levels, depending on how much you eat obviously. So, try to reduce these foods. Getting more active will help too although if you're doing 12hr shifts in a care home you're probably already quite active ! It does take a little while to adapt to a new diet and for your body to adapt too ! Stick with it.
 
mo im only eating what i would think are small portions of the pasta potatoes say a handful amount, and if not eating those what do u suggest ?

hi, firstly, it takes a while for your numbers to settle down, you seem to be heading in the right direction, so well done :)

eggs and bacon is great :), porridge isn't :(
meat and veg are great :) pasta and rice aren't :(
berries are the best fruits :) apples and melons aren't :(
yogurts are good if the natural greek kind, other types tend to be high or higher in sugar
you can replace potatoes with cauliflower mash with cheese, its yummy
mince is great as a spagetti bolognaise minus the spagetti lol, i make a home made pasta sauce (easy and better than dolmio anyway) and i have it with leek instead of the pasta, its yummy
salads are boring if you just dump some lettuce and tomatoes in a bowl, try...
shredded lettuce, sliced red onion, green peppers, thin sliced toms,sliced jalapeño peppers, sliced gherkins, sliced black olives topped with grated cheese and with a choice of cold meats (ham, pepperoni etc)

Unless you go onto meds you'll need to reduce these even further I'm afraid or increase exercise. You can eat more eggs, cheese, bacon, sausage, chicken, beef, fish, veg, pulses, berries or nuts ? There is plenty more but you can Google low carb foods or recipes.
 
also mince can be used for home made burgers, you just squish it all together add some salt and pepper and a good load of worcester sauce, make the patties and fry them, you can also make thinner patties then small dice some bacon then fry it crispy and small cubes of cheddar then seal the bacon and cheese in between the thin patties and fry quite slowly so as to cook the meat properly (check it while cooking as the middle of the meat is tuff to cook next to the middle) it takes some practise but its yummy the kids love it
 
andy, i thought porridge was ok for some but not others? also not a great lover of cauli, what do u put in your pasta sauce? i live on a narrowboat so kitchen space and gadgets at a bare minimum. IE work top space 8 inches long 4 wide ! my salads are never boring that said dont like jalipenos or olives or gerkins nut a lover of nuts either i think once 2nd blood test is done and i see the DN i will go on meds at the moment doc has said hold fire on excercise i dont drive so do walk alot and also active job although doc says that dont count just having my first innocent (as in make) veg daal and tho a tad spicy for me it is ok just find im getting very emotional about it all
 
You could courgette ribbons with a potato peeler as spaghetti. I adored pasta but I would really much rather have courgettes now.
If you cant drive to a supermarket Asda deliveries are quite cheap and their food prices are low

i live on a narrowboat so cant get delivery or have the space to store stuff courgettes i do like tho x
 
They will deliver to places of work. I understand about the storage. Do you have to rely on a corner shop? Very romantic living on a boat but must make things like exercising at home tricky. A workout DVD on a boat would be a challenge!

emotional is understandable :( been there done that! it think the emotional bit for me was despair tbh, despair at the thought of having to do this forever, never being able to enjoy food again, feeling like my freedom to do whatever i wanted had gone, but it won't be like that forever i promise, yes its a hassle (especially with your tiny countertop) but it will become normal, you won't give it a second thought, hang in there, look for the positives life changes this is forcing you to make, which you and all of us should have been doing anyway, think of it as an incentive,

pasta sauce is easy, you can experiment, tomato puree with a little water in a pan on the heat, onions, peppers, any spices paprika, italian spices etc, you can put in tinned tomatoes, garlic mushrooms, its all down to what you like, i like sautéing onions before i do anything with them but that could be an issues with your limited space, having more pans on the go, i go night fishing (not lately :() so i live off a tiny primes stove for days on end so i understand the problems with having no worktops and no freezer (or fridge) its all in the planning, you have to search for recipes online, its easier than me telling you the stuff i like because half of it you will say you don't like, i spend ages looking through "low carb recipes" lots are no good, i.e. not low carb enough or at all for that matter, lots are too difficult, lots have daft ingredients i can't find and lots just don't look or sound good, but its great when you find one that works, i recently discovered custard, wow this is great and better than anything you ever bought in a tin or tub and very easy, just needs patience, stuff like that makes food great again and all of the sudden things go from "can't enjoy food never again" to "oh my, this is amazing, i never would have found this if not for..." sorry I'm rambling.

this is a copy paste from my dear friend (who has gone missing btw EMAIL ME PLEASE)

I'm sure she won't mind me copying it, she is awesome

"Custard - It isn't difficult to make, just got to have patience:

300ml single cream or lactose free milk
4 egg yolks
sweetener
few drops of vanilla essence/extract

Heat up milk or cream, in a large bowl mix together the egg yolks, sweetener and vanilla, when the milk is quite hot, temper the egg yolk mixture, that means you add a tiny amount of hot milk whisking at the same time, then a little more milk and then you pour in the rest of the milk, whisking all the time.
Now return the custard mixture to the pan, and SLOWLY, and I mean SLOWLY, heat up but never ever boil or else you have vanilla scrambled eggs. Ok so you heat it up slowly and you keep stirring with a wooden spoon until the custard has thickened, takes about 10 minutes. Taste it, see if you want more sweetener, if you are happy with it"

ewwwww, i have a thing for not eating eggs from chickens lol, its crazy but i have this fear of breaking open the egg to find a half formed baby chicken lol, this would put me off eggs for life, so i prefer eggs from poor chickens that have been force fed growth hormones and never seen daylight :wacky:

Where do your eggs come from then Andy ? My kids are similar, I got fresh eggs from the farmer and there was a bit of feather on one so they wouldn't touch them ! We have little farm shops here outside peoples houses and I sent my boy to get some potatoes a few years back but he came back and said he didn't buy them cos they were dirty lol !

andy i do have 4 rings although small cooker top if that makes sense, i think id sink the boat if i did exercise on here lol titanic comes to mind im living with a friend after the break up of my marriage (4 months ago) so eventually may get a boat of my own, exercise well when it warms up a bit i will be boring a dog from the boat next door to go walkies with and although im not sedentary on my days off with washing machine being 5 mins walk away etc, anyway i digress, im a happy bunny tonight bloods lowest they have been so far and instead of getting upset tonight i came home at 8:30 and cooked bacon mushrooms cherry toms and poached eggs i know its a learning curve and a steep one but i will get there hopefully and i guess i will fall at a few hurdles to
