No you're right I've never experienced a real hypo fortunately. Those of you that do have my total sympathy. I once experienced a low of 3.9 which left me feeling a little light headed and shaky - but personally I think it was a 'false hypo' as it was only a month or so into my diagnosis and my body wasn't used to lower BG's. I also didn't need to do anything to correct it other than eating my evening meal as usual.

Ha ha - yes I've read other posts where you've talked about your truffles and cheesecake they sound yummy. I've just been a total disaster in the low carb baking/ treat making stakes so far - everything I've tried was horrid and ended up in the bin :yuck:
I often make low carb cake and have it for breakfast! Even disastrous ones can be much improved by heating and serving with double cream and blueberries! These recipes were particularly good:

Also there is a brand called Ugg which produce ready to go low carb bread and muffin mixes - just add eggs and water. I have just tried the chocolate chia muffins and thought they were lovely. Very expensive though!

Ooh also if you need an instant fix of something sweet try mixing 1 tbsp. peanut butter with 2tbsp double cream and sweetener of choice to taste. Keep mixing it until it thickens. It turns into something bearing a vague resemblance to fudge. I always have these ingredients in the house and it takes 1 minute to make. Am eating some now!:p

Sorry it's taken me so long to respond! My computer has been on the blink. I'll just go back and see what coconut cream icing I was talking about back nearly 3 weeks ago :)

Right - the lime whipped cream goes with a paleo lime pound cake recipe -which is by far the nicest low-carb cake I have made. Non diabetics can have it sweetened with honey, but obviously, I don't, alas, but a stevia goes a long way...
1 can of full-fat coconut milk chilled overnight. 1TBSP of freshly squeezed lime juice. 1 tsp lime zest, cut into fine strips. Whip it up. Ice the cake with it!

Coconut whipped cream: 1 can of coconut milk. 1 tsp of vanilla extract. 5 drops of stevia.
Chill coconut milk. whip up coconut milk fat until light and fluffy. Whip in vanilla, stevia. Use right away. Really lasts only another day refridgerated.
