So im a type 1 diabetic and have been for around 20 years, i know what i should be doing regarding my diet and everything. My trouble is that i am a chef, i work long hours and food that isnt good for me is easily available at any time. I have a good diet but then i have moments of weakness where i pig out on really bad high sugar foods because its so acessable. I need some advise on anything i can do to prevent my self from eating these foods? Or maybe i just need greater will power. Please help!! Thanks.

Will power is a limited commodity so it's not easy to just find more. Planning what your going to eat ahead of time maybe your best bet so you don't have to think about it. Make it a habit to prep your food in advance when your feeling motivated, if you know what your eating ahead of time and you've already made it you'll be less likely to eat something else and waste the food you've already made.

Always have something that is safe for you to eat ready and waiting.
If there are leftovers to be disposed of, dispose of them either in the bin or to someone who can eat them without risk to their health right away. Don't have them where they could accidentally fall into your mouth.
The longer you can maintain your way of eating the stronger you'll become. It does take time, but I managed it when I thought it was just for controlling my weight, now it is far more important I am so thankful I had decades to practice low carbing before having to do it in earnest.

If you are eating healthily most of the time, then maybe what you really need is a better way to deal with your sugars when you gorge.

Have you thought about an insulin pump, which many people find makes it easier to vary when and what they eat?

Also you could try Fiasp (the new faster-acting insulin), since it acts faster it can better cover high-sugar foods which are digested quickly. It is also good for corrections. I actually carry multiple insulins and use whichever is most appropriate for what I'm eating.
